Maldric is the cook of Castle Britannia in Ultima VI.
Maldric spoke of how his work fulfilled him, although he sometimes wished he could still live in his hut in the forest. He also spoke of his old cooking receipts and the guests that normally visited the castle (because of the war, that wasn't the case at the moment).
There wouldn't have been much to him, if not for his reactions to male and female Avatars, from which it becomes clear that Maldric is quite bisexual. However, while he openly showed his interest in a female Avatar, he tried to hide his homosexual interest in a male Avatar, stating it wouldn't be proper to say this to him.
